Sausage Potatoes Cheese Bacon Soup: Creamy and Comforting



I just made this and it is AWESOME- Used low fat-part skim cheese and regular breakfast sausage, cut sage to 1/2 tsp and thick curly noodles. I would up the fresh garlic and cut back on garlic powder next time, but otherwise, it is Perfect!


Cook the sausage & bacon. Chop the sausage links and bacon to desired size pieces, then fry them in a small skillet until browned and crispy. (*For even cooking, add the sausage first and cook 1 minute before adding the bacon.)

If you want to cut some calories, use chicken or turkey sausage instead of beef/pork, leave out the cheese, and use skim milk rather than whole. This will reduce the calories significantly. If you still want that cheesy flavor, you can sprinkle a little cheese over the top of each bowl when serving.

  • 3-4 slices of bacon

  • 4-5 large russet potatoes diced in 1/2 inch cubes

  • 1/3 cup diced onion

  • 1/2 cup shredded cheddar cheese

  • 1 teaspoon salt

  • 1/4 teaspoon black pepper

  • Instructions Preheat oven to 350 degrees. In a large pan, place sausage, and cook until sausage has browned and crumbled. Transfer sausage into bowl and set aside. Place bacon slices in the same pan that the sausage was cooked in, and fry bacon until browned and a little crisp. Remove bacon from pan and set aside. In the same pan, add onions and sauté in sausage/bacon drippings, until translucent and fragrant. About a minute or two. Add potatoes to pan, and combine with onions. Add salt and pepper, and cook potato mixture until potatoes are golden. About 8-10 minutes. Add sausage in and crumble the bacon slices in as well. Combine mixture, then transfer to a medium baking, or casserole dish.

  • Sprinkle cheese over top of potato mixture and bake in oven until cheese has melted. About 5-7 minutes. Serve with a side of scrambled or fried eggs and enjoy

I could not find the ratio of eggs to milk and heavy cream for your breakfast casserole with bacon or sausage. How much liquid (i.e.8 eggs, 1 cup milk) should be used to get the right consistency for the egg mixture?

Our skillet comfortably holds 5 to 6 eggs. Cook on low heat for about 6 to 8 minutes or until eggs are set. Once the eggs are cooked sprinkle shredded cheddar cheese on top. Cheese should melt quickly and the keto breakfast skillet with bacon, eggs, cheese and cauliflower is ready to serve!


Tuck the bacon pieces between the tater tots. Crumble the sausage finely and sprinkle on top. Sprinkle the cooked leeks evenly on top. Whisk the eggs with the milk, salt and pepper. Pour evenly over the tots.

This recipe was delicious and very well received! I'm not usually one to alter a recipe on the first try. I did not think there were enough peppers and onions in the store bought potatoes. I had an abundance of red pepper, green onion and mushrooms so I added an unmeasured amount and I also added another egg because of the additional veggies. I also pre browned the bacon and sausage the day before to save time, but opted not to pre assemble because of fridge space. I used my favorite Temptations 9 13 casserole dish, so there was no need to butter the dish. Covered with foil for first 45 minutes then removed foul until browned & bubbly. Definitely a keeper. Came out good, I would recommend less sausage as it overpowers the dish. Also used less than a teaspoon of salt and pepper and only a dash of garlic powder. Would use even less salt next time. Substituted tater tots for potatoes and added diced bellpeppers/onions (all fried up before baking). Cooked 30 min covered and 10 uncovered.
